Exceptionally talented, precise, and passionate; Piper-Heidsieck’s newly appointed cellar master, Séverine Frerson, is one of the very first women to attain the prestigious rank of cellar master for a leading Champagne House. Frerson follows the power of her intuition when crafting Champagne saying, “If the first quality of a Cellar Master is the love of wine, the second is intuition; and intuition is developed over the years. I always follow my instinct. Deep down within me, when I taste a wine or produce a blend, I just know.”
Frerson’s intuition is backed by the incomparable experience that she garnered in her years working alongside Piper-Heidsieck’s award-winning cellar master, Régis Camus. Camus vividly remembers the early days of their partnership and stated, “I remember our first tasting very well. I discovered a bubbly, intelligent and charming young woman who was eager to learn.” Personally selected by Camus to be his deputy cellar master in 2015, Frerson joined Piper-Heidsieck in 2002 and has held a range of important roles within the House. When asked what inspired him to appoint Frerson as his Chef de Cave, Camus cited, “Her personality, her frankness, her seriousness, her intuition, her outspokenness and, of course, her winemaking abilities made Séverine the perfect candidate.”
Born and raised in Champagne, her name was inspired by the character Séverine in Zola’s “The Beast Within” because her father loved the character’s charm and strength — traits that Frerson embodies. Frerson studied oenology at the University of Reims before joining the Comité Champagne in 1997, where she worked for two years. She then took up a position at Veuve Clicquot, where she worked alongside the cellar master.
Frerson’s husband also works in the Champagne industry and they are the proud parents of two daughters. “We talk about Champagne, but we don’t share our production secrets,” she says with a laugh. At home, Frerson enjoys cooking and creating food and wine pairings. She also enjoys sports, especially playing tennis and skiing with her family in the winter.
